One-pot pasta with sausage, mushrooms and basil is easy to prep and cooks up quickly in one pot. It’s hearty and flavourful and perfect for those nights when the family is hungry but you’re short on time. The best part about a one pot dinner? The easy cleanup!
I love pasta and I love an easy recipe, so one pot pastas make me very happy.
What is one-pot pasta?
You can have dinner on the table in less than 15 minutes. No draining the pasta, no extra pots for sautéing veggies and the sauce.
If you’ve never heard of it, let me brief you: One pot pasta is when you place uncooked pasta and all the ingredients for your sauce together in one pot or pan. You essentially cook your pasta right in the sauce. No draining the pasta, no starchy pot and colander to wash up. It’s brilliant!
No need to drain the pasta!
The reason you don’t need to drain the pasta in a dish like this is because your pasta absorbs all the liquid while it cooks in the sauce.
Get dinner on the table fast!
Last night, I concocted this simple but delicious recipe when dinner-time crept up on me and I had to scramble to put something healthy and wholesome on the table.
I had lots of yummy food in the fridge but not a lot of time to cook, so it was the perfect night for a one-pot dish.
This dish took a little longer than most one-pot meals because I cooked my sausage first, but all said and done, dinner was on the table in less than a half-hour, and…. (sound the trumpets, please) there was only one pot to wash.
And it tasted amazing!
One-Pot Pasta with Sausage, Mushrooms and Basil Recipe:
Feel free to improvise with whatever pasta, vegetables and herbs you have on hand.

Ingredients:
- spaghetti (enough for 4 adults)
- breakfast sausages
- 2 medium onions
- 4 large cloves garlic
- 1 large tomato
- handful baby carrots
- 1/2 green pepper
- 1 cup mushrooms
- handful fresh basil leaves, whole
- handful fresh oregano leaves, whole
- fresh ground pepper
- 1/4 cup white wine
- 3 -4 cups chicken broth
- grated parmesan (garnish)
Making your one-pot pasta dish:
- Cook sausage in a large pot or pan, stirring frequently until cooked through.
- Add onions and cook for a few minutes until soft.
- Deglaze pan with wine: pour 1/4 cup wine (or water or broth if peferred) into the pan, and scrape up all that yummy, brown goodness that’s stuck to the bottom of your pan. This will give the dish lots of flavour.
- Add spaghetti and remaining vegetables and herbs to the pan.
- Add chicken broth and crank up the heat.
- Use a set of kitchen tongs to keep things moving in the pan until the broth comes to a boil.
- Reduce heat to medium, and continue to cook until liquid has been absorbed and pasta is fully cooked.

To serve your pasta, Using your tongs, transfer a heaping pile of pasta to your plate, and garnish with your freshly grated parmesan.

Ingredients
- spaghetti enough for 4 adults
- 6 breakfast sausages chopped into 1/2 inch pieces
- 2 medium onions thinly sliced
- 4 large cloves garlic thinly sliced
- 1 large tomato diced
- handful baby carrots chopped
- 1/2 green pepper sliced
- 10 or so white mushrooms chopped
- handful fresh basil leaves whole
- handful fresh oregano leaves whole
- several cranks of the pepper grinder
- 1/4 cup white wine to deglaze pan – you can do this with water or broth
- 3 to 4 cups chicken broth to cover all ingredients in pan
- fresh parmesan cheese to garnish, grated
Instructions
- Cook sausage in a large pot or pan, stirring frequently until cooked through.
- Add onions and cook for a few minutes until soft.
