This Lentil Soup with Potatoes, Bacon and Vegetables is quick and easy to make, and so delicious. It’s one of my favourite homemade soups to serve for lunch or dinner on a cold winter day.
This easy lentil soup recipe is the recipe that kicked off my life-long love affair with making homemade soup for my family.
Unlike some lentil soups that are made with dry lentils, this recipe uses canned lentils so it’s really easy. This soup isn’t thick or creamy but it’s hearty and filling. The bacon, onions and garlic add lots of flavour to the broth, and the frozen mixed vegetables take the nutrition value up a notch.

I first tasted this lentil, potato and bacon soup in the early 90’s when a co-worker had a few of my colleagues and I over for lunch one day. She had a big pot of it simmering on the stove when we arrived, and it smelled so good.
Having never made homemade soup before (we were in our early 20’s), I was so impressed that she had made soup from scratch. She told me how easy it was to make and she gave me the recipe.
I proudly made it for my husband and I soon after, and served it with a loaf of my favourite homemade bread. My husband loved the soup as much as I did, and I made it often during the first couple of years that we were married.
I’ve since gone on to make dozens of soups from scratch, and we have many favourites now. This recipe will will always have a soft spot in my heart though because it was first soup I ever made from scratch, and the one that opened my eyes to the wonderful world of soup-making.
Ingredients for Lentil soup with Potatoes, Bacon and Vegetables
- 3 slices bacon, chopped and cooked
- 1 onion
- 1 clove garlic, crushed
- 5 cups chicken stock
- 3/4 tsp thyme
- 1/4 tsp black pepper
- 1 19 oz. tin of mixed lentils, drained
- 2 cups potatoes, diced and cooked
- 1 cup frozen, mixed vegetables
Making Your Soup:
- In a large pot, sauté the chopped onion until soft and translucent.
- Add the crushed garlic and continue to sauté for one minute.
- Add chicken stock, thyme, pepper and bacon to the pot.
- Bring to a boil and reduce to simmer for 10 minutes.
- Add the lentils, potatoes and frozen mixed vegetables, and simmer for 10 minutes.
I love to serve this soup with a slice of my Homemade Oatmeal Bread, still warm from the bread machine. It’s also excellent served with a crusty loaf or a salad.
