This easy lentil soup is chock-full of lentils, potatoes, bacon and frozen mixed vegetables. It's the perfect hearty, healthy homemade soup for a cold winter day.

  • 3 slices bacon chopped and cooked
  • 1 onion chopped
  • 1 clove garlic crushed
  • 5 cups chicken stock
  • 3/4 tsp thyme
  • 1/4 tsp black pepper
  • 19 oz. tin of mixed lentils drained
  • 2 cups potatoes diced and cooked
  • 1 cup frozen mixed vegetables


  • In a large pot, sauté the chopped onion until soft and translucent.
  • Add the crushed garlic and continue to sauté for one minute.
  • Add chicken stock, thyme, pepper and bacon to the pot.
  • Bring to a boil and reduce to simmer for 10 minutes.
  • Add the lentils, potatoes and frozen mixed vegetables, and simmer for 10 minutes.
