- 3 slices bacon chopped and cooked
- 1 onion chopped
- 1 clove garlic crushed
- 5 cups chicken stock
- 3/4 tsp thyme
- 1/4 tsp black pepper
- 19 oz. tin of mixed lentils drained
- 2 cups potatoes diced and cooked
- 1 cup frozen mixed vegetables
In a large pot, sauté the chopped onion until soft and translucent.
Add the crushed garlic and continue to sauté for one minute.
Add chicken stock, thyme, pepper and bacon to the pot.
Bring to a boil and reduce to simmer for 10 minutes.
Add the lentils, potatoes and frozen mixed vegetables, and simmer for 10 minutes.
