Healthy Vietnamese Spring Rolls

These healthy Vietnamese Spring Rolls are fresh, delicious and so easy to make at home!  Perfect as an appetizer, a snack, or for pot-lucks and get-togethers.

Instructions

  • Toast sesame seeds, set aside.
  • Soften rice vermicelli noodles according to instructions on package.
  • Julienne mango and vegetables and lay out in assembly line fashion.
  • Submerge rice paper wrapper in warm water for 15 seconds.  Shake excess water off, and lay flat on plastic cutting board.
  • Stack fruit and veg towards bottom, centre of rice paper.
  • Top with noodles, sesame seeds and cilantro.
  • Bring bottom edge of wrapper up over filling, and fold in edges.
  • Roll up, bringing sides in until you reach the top of the wrapper.

Notes

Keep covered with damp paper towel if serving soon.  
If making ahead store in sealed container with wax paper between layers of spring rolls.  
Best served same day.
