  • 1 c . Quick Oats
  • 1/2 cup orange juice from concentrate i.e. the jug in your fridge
  • 1/2 cup boiling water
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup raisins
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  1. In a small bowl, mix the first 3 ingredients (oatmeal, boiling water, orange juice), and let sit 15 minutes.
  2. In a large bowl, cream butter and sugars. Beat in eggs and vanilla. Add in the raisins, and when 15 minutes is up, dump in your oatmeal mixture. Stir well.
  3. In a separate bowl, sift together flour, baking powder, baking soda and salt. Stir well.
  4. Add these dry ingredients to the wet, and fold gently until everything is just moist.
  5. Now, spoon your batter into a muffin tin, filling 3/4 full.
  6. Bake at 350ºF for 20 minutes or until knife/toothpick comes out clean
